But the biker wasn’t nice to the pickup driver, that two finger salute is the equivalent of the middle finger in the UK

That two finger sign is the biker sign. Normally its just a brotherhood kind of thing used between bikers and is normally done with the left hand, but I guess the guy in the video is showing his appreciation for a cager looking out for a rider. Either that or its just a peace sign. Stuff like that is different here in the US.
